Instructions

  1. Preheat oven to 350℉ and grease a 9×5-inch loaf pan with non-stick spray or oil.
  2. Whisk together sugar, milk, oil, eggs, and vanilla in a medium bowl until smooth and well combined.
  3. In a separate bowl, stir together flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and gently stir just until combined; avoid overmixing to keep bread tender.
  5. Toss diced strawberries with 2 tablespoons of flour to prevent sinking, then fold them carefully into the batter.
  6. Pour batter into prepared loaf pan. Bake 55 to 60 minutes, until top is golden brown and a toothpick inserted in center comes out clean.
  7. Cool bread in pan on rack for about 5 minutes.
  8. Loosen edges with a knife and turn bread onto rack. Let cool completely before slicing.
