- 4 cod fillets (can use fully thawed frozen cod)
- 1 cup breadcrumbs (plain or seasoned)
- 4 tablespoons melted butter (or olive oil for lighter option)
- 1 tablespoon fresh parsley (or fresh dill/basil)
- 2 cloves minced garlic (or garlic powder)
- 2 tablespoons lemon juice (freshly squeezed preferred)
- 1 small onion, finely chopped (or shallots)
- 2 tablespoons olive oil (optional)
- 1/4 cup white wine (or fish stock/broth; omit for non-alcoholic)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- If using frozen cod, thaw in the fridge and pat fillets dry with paper towels.
- (Optional) Briefly sauté minced garlic in olive oil or butter to mellow flavor.
- In a bowl, mix breadcrumbs, melted butter, chopped fresh parsley, and minced (or sautéed) garlic.
- Season both sides of cod fillets with salt and pepper.
- Place seasoned cod fillets in a baking dish.
- Evenly sprinkle breadcrumb mixture over each fillet.
- Drizzle white wine around fillets and squeeze fresh lemon juice over them.
- Scatter finely chopped onion around the fish.
- Bake for 20–25 minutes, starting to check at 20 minutes; rotate baking dish halfway through if needed, until cod is opaque and flakes easily with a fork.
- Remove from oven, garnish with lemon wedges, and serve hot.
