Instructions

  1. Preheat oven to 375°F (190°C).
  2. If using frozen cod, thaw in the fridge and pat fillets dry with paper towels.
  3. (Optional) Briefly sauté minced garlic in olive oil or butter to mellow flavor.
  4. In a bowl, mix breadcrumbs, melted butter, chopped fresh parsley, and minced (or sautéed) garlic.
  5. Season both sides of cod fillets with salt and pepper.
  6. Place seasoned cod fillets in a baking dish.
  7. Evenly sprinkle breadcrumb mixture over each fillet.
  8. Drizzle white wine around fillets and squeeze fresh lemon juice over them.
  9. Scatter finely chopped onion around the fish.
