Instructions

  1. Melt 1 tablespoon butter in a small nonstick skillet over medium heat.
  2. Add 1/3 cup panko breadcrumbs and toast, stirring often, for 3–5 minutes until golden brown and nutty; remove from heat and let cool.
  3. Combine 2 cups Farmer Cheese, 4 chopped dill pickle spears, 1/4 cup fresh dill, 1 tablespoon ranch seasoning, and 2 tablespoons pickle juice in a food processor or blender.
  4. Pulse or blend briefly to combine, leaving small pickle pieces; if the dip is too thick, add 1–2 more tablespoons pickle juice and pulse until spreadable.
  5. Transfer the dip to a serving bowl, sprinkle toasted breadcrumbs over the top, and garnish with extra chopped pickles and fresh dill.
