- 2 medium yellow squashes
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup seasoned breadcrumbs (panko or Italian-style)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp smoked paprika (optional)
- Salt and pepper, to taste
- Cooking spray or olive oil spray
- Fresh parsley, chopped (for garnish)
Instructions
- Wash yellow squashes and slice into about 1/2-inch thick rounds.
- Pat each slice dry with paper towels to remove moisture.
- Put seasoned flour (salt and pepper) in a shallow bowl.
- Whisk eggs in a second shallow bowl until smooth.
- Combine breadcrumbs, grated Parmesan, garlic powder, and smoked paprika (if using) in a third shallow bowl.
- Dip each squash slice in flour, shake off excess, dip in beaten eggs, then press into the breadcrumb mixture so crumbs adhere.
- Preheat the air fryer to 400°F (200°C) for about 3 minutes.
- Lightly spray the air fryer basket with cooking spray.
- Arrange coated squash slices in a single layer in the basket without overcrowding and lightly spray the tops with cooking spray.
- Air fry at 400°F (200°C) for 8–10 minutes, flipping slices halfway through to brown both sides.
- Remove cooked squash and sprinkle with chopped fresh parsley.
