Ingredients
- 1 medium head green cabbage (about 2 pounds), cut into wedges
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped, plus extra for garnish
Instructions
- Cut the medium head of cabbage into wedges.
- Season cabbage wedges with salt and black pepper to taste.
- In a large skillet, melt 2 tablespoons unsalted butter and 1 tablespoon olive oil over medium-high heat until the butter bubbles and froths.
- Place cabbage wedges cut side down in the hot skillet; sear each side for 3–4 minutes until golden-brown. Flip to sear the other side, then remove wedges and set aside.
- Reduce heat to medium and add the chopped yellow onion; cook, stirring occasionally, about 5 minutes until soft and translucent.
- Stir in minced garlic and Cajun seasoning; cook for about 1 minute until fragrant and slightly browned.
- Pour in heavy cream and scrape up browned bits from the pan; simmer gently 2–3 minutes until the sauce thickens slightly.
- Add freshly grated Parmesan cheese and chopped fresh parsley; cook about 1 minute until the cheese melts.
- Return the seared cabbage wedges to the pan, spoon creamy sauce over them, partially cover, and cook about 5 minutes until cabbage is tender with a little bite.
- Remove from heat and sprinkle with extra fresh parsley before serving.
