A tangy, creamy dip made with smooth blended cottage cheese, chopped dill pickles, and fresh dill. High in protein, quick to prepare, and perfect for game day or casual get-togethers.

  • Total Time: 70-80 minutes (includes chilling time)
  • Yield: Approximately 2 cups dip, serves 6-8 1x

Ingredients

Scale
  • 1.5 cups cottage cheese (whole milk recommended), blended until smooth and creamy
  • 0.5 cup finely chopped dill pickles
  • 3 tablespoons pickle brine
  • 0.5 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 teaspoons dried dill or 1 tablespoon fresh dill, finely chopped
  • 0.25 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste (freshly ground recommended)

Instructions

  1. If the cottage cheese seems watery, drain it in a fine-mesh strainer for about 30 minutes.
  2. Place cottage cheese in a blender or food processor and blend for 30–45 seconds until completely smooth, scraping down the sides as needed.
  3. Drain dill pickles and finely chop until you have about ½ cup of small pieces.
  4. In a mixing bowl, combine the blended cottage cheese, chopped pickles, mayonnaise, pickle brine, Dijon mustard, dill (dried or fresh), garlic powder, and a pinch of salt and pepper.
  5. Stir the mixture until well combined and smooth.
  6. Taste and adjust seasoning, adding more salt, pepper, or pickle brine a little at a time.
  7. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  8. After chilling, stir the dip and if it’s too thick, loosen with a splash of pickle brine to reach the desired consistency.

Notes

Blend cottage cheese until luxuriously smooth for best texture; avoiding unblended curds which result in chunkiness., Start with less pickle brine and add gradually to avoid watery dip., Chop pickles finely and drain well to avoid weighing down the dip., Let dip chill for at least an hour or overnight for best flavor., Use whole milk cottage cheese for creamier texture; low-fat versions are acceptable but less rich., Substitute pickle brine with white vinegar and a pinch of salt if unavailable., Dairy-free version can be made with thick dairy-free yogurt, adjusting seasonings to taste., Store dip in airtight container in fridge for up to 5 days, stirring before serving to refresh texture., Do not freeze as cottage cheese texture will degrade.
