  • 1/2 lb ground beef
  • 1/4 cup chopped onion
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped dill pickle slices
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)
  • Optional: sesame seeds for topping

Instructions

  1. Thaw puff pastry in the fridge overnight or on the counter 20–30 minutes until still cold but pliable.
  2. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  3. On a lightly floured surface, roll out the puff pastry to an even thickness and cut into approximately 3-inch squares (about 12 pieces).
  4. Heat a skillet over medium heat, add ground beef and chopped onion, and cook, breaking up the meat, until beef is browned and onions are soft, about 6–8 minutes.
  5. Drain any excess fat from the skillet.
  6. Remove skillet from heat and stir in ketchup, mustard, salt, and pepper; taste and adjust seasoning as needed.
  7. Spoon about 1–2 teaspoons of the beef mixture into the center of each pastry square.
  8. Top each portion with a pinch of shredded cheddar cheese and a few chopped pickle pieces, taking care not to overfill.
  9. Fold the corners of each pastry square toward the center and pinch to seal, leaving a small vent if desired; place the bites on the prepared baking sheet spaced apart.
  10. Beat the egg for the egg wash and brush each pastry bite with the beaten egg; sprinkle with sesame seeds if using.
  11. Bake for 18–20 minutes until the pastry is puffed and deep golden brown.
  12. Remove from oven, let cool for a couple of minutes, then transfer bites to a wire rack to cool further.
