Instructions

  1. Heat 1 tablespoon olive oil and 3 tablespoons butter in a large 12-inch skillet over medium-low heat.
  2. Add 4 cloves minced garlic and ¼ cup finely diced white onion; sauté until fragrant, about 30 seconds.
  3. Add 1 ½ cups medium-grain rice and cook, stirring often, until the grains turn golden, about 5 minutes.
  4. Stir in a 10-ounce bag of frozen corn.
  5. Increase heat to medium and carefully pour in 3 cups boiling water and 1 tablespoon chicken bouillon; stir to combine.
  6. Bring the mixture to a boil.
  7. Reduce heat to low, cover the skillet with a tight-fitting lid, and cook covered for 15 minutes.
  8. Turn off the heat and keep the lid on; let the rice rest for 5 minutes.
  9. Remove the lid and fluff the rice with a fork.
  10. Garnish with chopped parsley or sliced green onions, if desired.
