Golden-brown, bite-sized banana fritters that are crispy on the outside and soft and sweet inside, perfect for a quick snack or dessert.

  • Total Time: 20 minutes
  • Yield: About 12-15 fritters 1x

Ingredients

Scale
  • 3 ripe bananas
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp sugar (adjust to sweetness preference)
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup milk (or milk alternative)
  • Oil for frying (vegetable, canola, or light sunflower recommended)

Instructions

  1. Peel 3 ripe bananas and mash in a bowl until mostly smooth, leaving a few small lumps if desired.
  2. Whisk 1 cup all-purpose flour, 1 tsp baking powder, 2 tbsp sugar, and 1/4 tsp salt in a separate bowl until lump-free.
  3. Gradually stir the dry ingredients into the mashed bananas; then add 1/2 cup milk and 1/2 tsp vanilla extract and stir gently until just combined. Avoid overmixing.
  4. Pour about 1/2 inch of neutral oil into a frying pan and heat over medium heat. Test oil readiness by dropping a small amount of batter; it should sizzle and bubble slowly.
  5. Scoop tablespoon-sized dollops of batter into the hot oil, leaving space between fritters.
  6. Fry each side for about 2 to 3 minutes until golden brown and cooked through; adjust heat to prevent burning.
  7. Transfer cooked fritters to paper towels to drain excess oil.
  8. Repeat frying with remaining batter and keep finished fritters warm in a low oven (200°F / 95°C) if cooking a large batch.
  9. Serve warm, optionally topped with syrup, powdered sugar, or ice cream.

Notes

Use bananas that are fully ripe with brown spots for maximum sweetness and flavor., Keep fritters roughly the same size for even cooking., Avoid overmixing the batter; a few lumps keep the fritters light and fluffy., Maintain medium oil heat to prevent burning or soggy fritters., Add-ins such as cinnamon, nutmeg, chocolate chips, or chopped nuts are optional., This recipe can be made gluten-free by using a 1:1 gluten-free baking flour blend., For a baked version, spread batter on a lined baking sheet and bake at 400°F (200°C) for 10–12 minutes, flipping halfway., Store leftovers in an airtight container in the fridge for up to 3 days; reheat in an oven at 350°F (175°C) to restore crispness., Fritters freeze well; freeze in a single layer, then store in a freezer bag for up to 1 month.
