Instructions

  1. Blend the cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix in a blender until smooth and creamy, with no lumps.
  2. Preheat your oven to 350°F (180°C).
  3. Line a baking sheet with parchment paper. Pour the blended mixture onto it and spread out into a thin, even circle roughly the size of a small plate.
  4. Bake the flatbread in the oven for about 30 minutes, until edges are golden brown and the flatbread is firm to the touch.
  5. Remove the flatbread from the oven and increase the oven temperature to 400°F (200°C).
  6. Spread pizza sauce evenly over the flatbread, then sprinkle grated cheese on top and scatter pepperoni slices over the cheese.
  7. Return the pizza to the oven and bake for another 8-10 minutes until the cheese is melted, bubbly, and starting to brown at the edges.
