These Valentine’s Day mini apple pies are such a sweet little treat to share with someone special. Imagine all the cozy, warm flavors of apple pie, now baked into an adorable heart shape that’s just perfect for the occasion.

We’re talking buttery, brown sugar-sprinkled Granny Smith apples tossed with cinnamon and tucked inside a flakey, heart-shaped pastry crust. It’s a treat that hits all the right notes without any fuss.

Start by dicing up your apples and giving them a good toss with fresh lemon juice. Then mix in brown sugar, melted butter, cinnamon, and just a pinch of salt for that perfect flavorful balance.

Roll out your puff pastry on a lightly floured surface using a rolling pin so it’s nice and even. Then grab a heart-shaped cookie cutter and cut out plenty of heart shapes to become the crust for your pies.

When I made these, I started with the larger heart cutter first. I actually had more apple filling than pastry ready, so I ran back to grab some extra puff pastry and used smaller heart cutouts to finish off all the apples. It’s a handy trick if you have extra filling leftover!

Line a baking sheet with parchment paper—these pre-cut parchment sheets are my favorite since they’re so easy to use and always fit perfectly. Then place your heart-shaped pastry cutouts on the sheet and fill each one with the apple mixture, leaving about half an inch border around the edges.

Beat an egg in a small bowl and brush it along the edges of your pastry hearts. This egg wash helps seal the pies and gives them a lovely golden color when baked.

After brushing the edges, place another heart-shaped pastry on top and gently press down around the edges using a fork to crimp and seal the pie. This keeps the filling from escaping and adds a pretty decorative touch.

Give each mini pie another brush with the beaten egg and finish by sprinkling just a light pinch of salt on top—it really amps up the flavor and balances the sweetness.

For a little extra cuteness and to help steam escape while baking, add three small slits or even a tiny heart cutout right at the center of each pie.

Pop your tray into a 400°F preheated oven and bake for about 18 to 21 minutes until the pies are puffed, golden, and absolutely irresistible.

While the pies bake, mix up a simple but delicious frosting by combining powdered sugar with milk. Start with ¼ cup powdered sugar and 2 teaspoons milk, stirring until smooth. If it’s too thick, add a bit more milk a half teaspoon at a time to get the perfect drizzling consistency.

Instructions
