Delicious Valentine Sandwich Cookies with heart-shaped chocolate cookies and creamy vanilla filling, perfect for special occasions like Valentine’s Day or anniversaries.

  • Total Time: 1 hour 30 minutes
  • Yield: Approximately 24 sandwich cookies 1x

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened (for filling)
  • 23 tablespoons half and half or milk (for filling)
  • 2 teaspoons pure vanilla extract (for filling)
  • 1/8 teaspoon salt (for filling)
  • 3 cups powdered sugar

Instructions

  1. Cream the butter and granulated sugar in a large bowl on medium speed until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing on low speed just until combined; avoid over-mixing.
  5. Divide the dough into two halves, shape each into a flat disc, wrap in plastic wrap, and chill in the refrigerator for about 1 hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. Roll out one disc of dough on a lightly floured surface to 1/8 to 1/4 inch thickness.
  8. Cut cookie dough into heart shapes using a cookie cutter and transfer to prepared baking sheets.
  9. Bake for 9-10 minutes until cookies are set around the edges but not crispy.
  10. Cool cookies completely on a wire rack.
  11. Prepare the filling by beating softened butter, half and half (or milk), vanilla extract, and salt until smooth.
  12. Gradually add powdered sugar, beating until the filling is thick, creamy, and pipeable. Optionally add pink or red food coloring for a festive look.
  13. Fill a piping bag with the frosting and pipe onto the flat side of half the cookies.
  14. Top with remaining cookies to form sandwiches, pressing lightly to spread filling evenly without excess squeezing out.
