Instructions
- Start by cooking the fresh corn kernels until they’re tender but still crisp, usually taking about 5–7 minutes.
- Let the corn cool, then mix it with diced cucumber, halved cherry tomatoes, and chopped red onion in a large bowl.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth and creamy.
- Toss the dressing with the vegetable mixture until evenly coated.
- Sprinkle crumbled feta cheese and chopped cilantro on top before serving.
Notes
For a fresh little spicy kick, add diced jalapeños if you like.
