- 12 graham cracker sheets (about 1 3/4 cups crumbs)
- 1 oz bag freeze-dried strawberries
- 8 oz full-fat brick style cream cheese, softened to room temperature
- 3/4 cup powdered sugar
- 16 oz white chocolate or vanilla almond bark
Instructions
- Put graham crackers in a food processor and crush into crumbs.
- Add freeze-dried strawberries and blend until combined. Reserve 1 Tbsp of the strawberry-graham cracker crumbs for decorating if desired.
- Add cream cheese and blend until smooth and combined with the crumbs.
- Add powdered sugar and blend until smooth to form a creamy batter.
- Using a small cookie scoop, scoop truffles into small balls and place on a parchment lined baking sheet.
- Freeze the truffles for 15-30 minutes to firm them up for easier coating.
- Melt white chocolate or almond bark in a microwave-safe bowl, heating carefully to avoid burning.
- Gently roll each chilled truffle into a ball.
- Using a fork, dip truffles into melted white chocolate, tapping on the bowl edge to remove excess.
- Place dipped truffles back on parchment paper to set. Use a toothpick or cake tester to help remove truffles from the fork without damage.
- If desired, drizzle leftover melted white chocolate over set truffles using a piping bag or plastic bag with a snipped corner.
- Sprinkle reserved strawberry-graham cracker crumbs or colorful sprinkles on top for decoration.
- Chill truffles for at least 1 hour to set.
- Store leftovers in an airtight container in the fridge or freezer for best freshness.
