Red Velvet Truffles are bite-sized cake balls made from red velvet cake mix and cream cheese, dipped in white chocolate coating, perfect for festive occasions or easy homemade treats.

  • Total Time: 1 hour (including cooling, chilling, and decorating)
  • Yield: Approximately 24 truffles 1x

Ingredients

Scale
  • 1 box red velvet cake mix (including ingredients required on the box such as water, oil, and eggs)
  • 8 oz cream cheese, softened to room temperature
  • 12 oz almond bark or white chocolate candy melts
  • Festive sprinkles for garnish (optional)

Instructions

  1. Prepare red velvet cake batter according to the package instructions, using required ingredients (typically water, oil, and eggs).
  2. Pour batter into a 9×13-inch baking pan and bake as directed on the box.
  3. Allow baked cake to cool completely.
  4. Trim off crispy edges from the cake for smoother texture (optional).
  5. Crumble the cooled cake into fine crumbs in a large bowl.
  6. Add the softened cream cheese to the cake crumbs.
  7. Mix by hand until the mixture forms a smooth, dough-like consistency.
  8. Line a baking sheet with parchment paper.
  9. Using about 2 tablespoons of the mixture, shape into smooth, round balls and place on the prepared baking sheet.
  10. Freeze the cake balls for at least 30 minutes to firm up.
  11. Melt the almond bark or white chocolate candy melts in a microwave-safe bowl using 30-second bursts, stirring in between.
  12. Dip each chilled cake ball completely into the melted chocolate, lift out with a fork, and gently tap off the excess coating.
  13. Place dipped truffles back onto the parchment paper to set.
  14. Before coating hardens, optionally sprinkle with festive sprinkles or decorate with extra cake crumbs or white chocolate drizzle.
  15. Allow truffles to firm up at room temperature or refrigerate/freeze briefly before serving.

Notes

Store truffles in an airtight container in the refrigerator to keep fresh for 3-5 days., Place wax or parchment paper between truffle layers to prevent sticking when storing., For longer storage, freeze wrapped truffles for up to 2 months; thaw in the fridge overnight before serving., Use a good quality cake mix for better flavor and vibrant red color., Softened cream cheese yields better texture and taste., Chilling cake balls before dipping helps them hold shape and eases coating., A small cookie scoop can help make uniform truffles., Use a fork for dipping and tapping off excess coating for cleaner appearance., Variations include using dark or milk chocolate coating, adding espresso powder to the cake mix, rolling balls in nuts or crumbs instead of dipping, mixing in mini chocolate chips or sprinkles into the dough, and drizzling colored melted chocolate for decoration., Suitable substitutions like homemade cake, mascarpone for cream cheese, and dairy-free options are possible.
