- 4 tsp cinnamon
- 2 tsp mixed spice (optional)
- 65 g/1/4 cup store-bought caramel sauce
Instructions
- Preheat oven to 400°F (200°C). Lightly flour a work surface and roll out the puff pastry into a rectangle about 1/4 inch thick.
- Brush the puff pastry evenly with 2 tablespoons of melted butter.
- Sprinkle the surface generously with 100g Demerara or Turbinado sugar, 4 teaspoons cinnamon, and 2 teaspoons mixed spice (if using).
- Roll the pastry tightly from the narrow end to form a log.
- Cut the rolled pastry into 12 equal slices by cutting in halves, then quarters, then thirds to ensure even pieces.
- Arrange the slices on a buttered baking dish leaving about 1/2 inch spacing between each to allow for puffing; optionally, line the dish with parchment paper for easier cleanup.
- Chill the arranged rolls in the refrigerator for 20 minutes to help layers stay separate during baking.
- Bake the rolls in the preheated oven for 25 to 30 minutes until puffed and golden brown.
- Remove from oven and drizzle with caramel sauce before serving while warm.
