Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, stir together oats, quinoa, chopped nuts, brown sugar, and a pinch of sea salt until evenly mixed.
- Warm a small skillet over medium-low heat. Add melted coconut oil and maple syrup, whisking until combined.
- Whisk in peanut butter and cocoa powder until the mixture is smooth and glossy, with no lumps. Remove from heat.
- Pour the peanut butter chocolate mixture over the oat mixture. Fold together with a rubber spatula until all oats and nuts are evenly coated.
- Spread the granola evenly on the prepared baking sheet. Press down firmly to form a thin, even layer.

- Remove the granola from the oven. Immediately sprinkle chopped chocolate pieces evenly over the top.
