- 2 large eggs

- 1/2 cup protein powder of choice
- 2/3 cup granulated sweetener of choice (e.g., sugar-free monk fruit sweetener)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp sea salt
- 2/3 cup sugar-free chocolate chips (or regular chocolate chips)
Instructions
- Preheat oven to 350°F (177°C) and line a large baking sheet with parchment paper.
- In a large bowl, whisk together eggs, peanut butter, Greek yogurt, and vanilla extract until smooth and creamy. Use room temperature ingredients for easier mixing; a hand mixer is helpful.
- Add oats, protein powder, granulated sweetener, baking powder, baking soda, salt, and cinnamon. Stir until a sticky dough forms.
- Gently fold in the chocolate chips.
- Spoon mounds of dough onto the prepared baking sheet with space between each. Shape cookies as desired since dough won’t spread much.
- Bake on the center rack for 9-11 minutes until edges are just golden.
- Cool cookies on the baking sheet for at least 10 minutes before removing.
- Store cookies in an airtight container or zip-top bag in the refrigerator for up to 1 week, or freeze for up to 3 months.
