- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup chopped almonds or walnuts (optional)
- 1 tablespoon chia seeds (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 350°F (175°C). Generously grease a 9×9-inch baking dish with cooking spray or butter.
- In a large bowl, whisk together the cottage cheese, eggs, honey or maple syrup, vanilla extract, cinnamon, and salt until smooth and creamy.
- Stir in the oats and almond milk, then let the mixture sit for 5 minutes to allow oats to soften and thicken the batter.
- Gently fold in the blueberries, nuts (if using), and chia seeds (if using), being careful not to crush the berries and evenly distributing them throughout the mixture.
- Pour the batter into the prepared baking dish and smooth the top evenly.
- Bake for 40 to 45 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for 5 to 10 minutes before slicing to set and prevent crumbling.
