Lucky Charms Treats for St. Patrick’s Day

One of my favorite things passed down from my mom is our love for marshmallow treats. Just last weekend, my twin sister and I had a blast making treats together, and these Lucky Charms Treats were a standout! They’re especially perfect for celebrating St. Patrick’s Day with the family.

How Many Treats Can I Get from One Batch?

From one batch, you’ll get about 20 to 24 treats. It really depends on how big or small you slice them, so pick the size that fits your party or snack needs!

Delightfully gooey Lucky Charms Treats with a smooth green white chocolate bottom layer, perfect for St. Patrick’s Day celebrations. A fun twist on classic rice krispie treats with bright colors and magical marshmallows.

  • Yield: 20 servings 1x

Ingredients

  • 4 Tbsp butter, plus extra to grease your pan
  • 1 1/2 bags mini marshmallows (about 15 oz each)
  • 6 cups Lucky Charms Cereal
  • 1 bag white chocolate chips (12 oz)
  • 4 drops green food coloring

Instructions

  1. Butter the bottom of a 9×13 pan using a paper towel to prevent sticking. Melt 4 tablespoons of butter in a large microwave-safe bowl. Pour the mini marshmallows over the melted butter and toss to coat every marshmallow.
  2. Microwave the bowl for 30 seconds, stir, then microwave another 30 seconds and stir again. Repeat until marshmallows are completely melted and smooth.
  3. Gradually add the Lucky Charms cereal into the marshmallow mixture, mixing well after each addition to coat the cereal thoroughly. Transfer the mixture to the greased pan. Wet your hand with cold water to avoid sticking, then press the mixture evenly into the pan. Cover and refrigerate for at least 1 hour to chill.
  4. After chilling, cut the treats into 20-24 squares. Place them upside down on wax paper. Melt the white chocolate chips in the microwave for 45 seconds, stir, then heat another 45 seconds and stir until smooth. Add the green food coloring and mix well to create a green chocolate coating.
  5. Dip the bottom of each treat square into the green-tinted white chocolate. Place the treats back on the wax paper upside down to let the chocolate harden. Once set, serve and enjoy!

Notes

Adjust the number of green food coloring drops to achieve your desired shade of chocolate.
