  • 2 tablespoons chopped fresh green onions or chives
  • 1 large egg
  • 1 tablespoon cool water
  • Optional: additional fresh herbs like chives, thyme, basil, parsley
  • Optional additions: caramelized onions, finely chopped prosciutto, diced sundried tomatoes

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together 1 large egg with 1 tablespoon cool water to make an egg wash. Set aside.
  3. Lightly dust countertop with flour. Unfold thawed puff pastry sheet. Sprinkle flour on top and gently roll over it to smooth creases; do not stretch.
  4. Using a pastry brush, spread some of the egg wash evenly over the pastry surface, reserving some for later.
  5. Spread softened Boursin cheese evenly over the entire pastry sheet, edge to edge.
  6. Evenly scatter chopped green onions and fresh herbs over the Boursin layer, ensuring coverage near the edges.
  7. Sprinkle grated Parmesan and sharp cheddar cheese evenly on top of the herbs.
  8. Starting from the edge nearest you, tightly roll the pastry like a jelly roll, tucking in cheese and herbs as you go. Place the roll seam-side down on counter.
  9. Cut the roll in half, then each half into two equal parts. Slice each smaller piece into 2 or 3 rounds about ½ inch thick, yielding 12 to 16 pieces.
  10. Arrange sliced rounds spaced on prepared baking sheet. Brush tops with remaining egg wash.
  11. Bake for 14 to 18 minutes or until puffs are golden and puffed up.
  12. Remove from oven and optionally sprinkle with additional chopped green onions or chives.
  13. Serve warm or at room temperature.
