Instructions
- Whisk together flour, baking powder, baking soda, salt, ground ginger, cinnamon, and cloves in a small bowl until evenly mixed.
- In a large bowl or stand mixer, beat butter, shortening, dark brown sugar, and egg on medium speed until creamy and well blended.
- Add molasses and vanilla extract, then beat until fully combined.
- Gradually add dry ingredients to the wet mixture, mixing until smooth dough forms with no lumps.
- Press dough evenly into an 8×8-inch pan lined with parchment paper, smoothing the surface flat.
- Sprinkle holiday nonpareils sprinkles evenly over the dough and gently press them in to stick.
- Chill the dough in the refrigerator for at least 2 hours or up to 8 hours.
- Preheat oven to 375°F; line baking sheets with parchment paper.
- Remove chilled dough from pan using parchment and place on a cutting board.
- Using a ruler, cut dough into 1/2-inch squares to get approximately 10 to 11 rows per side (about 100 pieces total).
- Place cut dough pieces on baking sheets, spacing about 1 inch apart; fit about 30 to 35 pieces per tray.
- Bake each tray for 7 minutes; let cookies sit on hot pans for 2 minutes before transferring to wire racks to cool completely.
