- 1 lb puff pastry (2 sheets), thawed according to package instructions
- 1 Tbsp all-purpose flour, for dusting
- 1 1/4 lb Granny Smith apples (3 medium), peeled, cored, and diced into 1/3 inch thick pieces
- 1 Tbsp unsalted butter
- 1/4 cup brown sugar, lightly packed
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 1 egg + 1 Tbsp water for egg wash
- 1/2 cup powdered sugar
- 1–2 Tbsp heavy whipping cream
Instructions
- Preheat the oven to 400˚F. Thaw puff pastry according to package directions while preparing the filling.
- In a medium pot, melt butter over medium heat. Add diced apples and cook, stirring occasionally, until tender, about 5 minutes.
- Reduce heat to low. Stir in brown sugar, cinnamon, and salt. Let simmer for about 3 minutes as mixture thickens. Remove from heat and let cool.
- On a lightly floured surface, roll out first sheet of puff pastry into an 11-inch square. Cut into 4 equal squares.
- Place cooled apple filling onto half of each square, leaving a half-inch border around edges.
- Whisk together egg and water to form egg wash. Brush edges of pastry squares lightly with egg wash.
- Fold pastry over filling to form triangles. Press edges firmly and crimp with fork to seal.
- Place turnovers on a parchment-lined baking sheet spaced about an inch apart. Cut 2-3 small slits on top of each for steam to escape. Optionally chill uncovered for 20 minutes to reduce leaks.
- Brush tops with egg wash. Bake at 400˚F for 20-23 minutes until golden and puffed.
- While turnovers bake, whisk powdered sugar and heavy cream until smooth for glaze.
- Drizzle glaze over turnovers while still warm. Serve and enjoy!
Notes
To prevent leaks, chill assembled turnovers uncovered in the fridge for 20 minutes before egg wash and baking., Make ahead: Freeze uncooked assembled turnovers (without egg wash) flat on a baking sheet for 20 minutes. Then transfer to a freezer bag. Bake from frozen at 400°F for 23-25 minutes after brushing with egg wash., Store leftovers at room temperature for up to 1 day, or in an airtight container in the fridge for up to 3 days. Reheat in oven to refresh crust.
