  • 1 tbsp milk

Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a small bowl, mix together 1/4 cup light brown sugar, 1/4 cup chopped pecans, and 1 tsp ground cinnamon to prepare the streusel topping. Set aside.
  3. In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, 2 tsp baking powder, 1/4 tsp baking soda, and 1/4 tsp salt.
  4. In another bowl, whisk together 1 large egg, 1/2 cup milk, and 1/4 cup oil until fully combined.
  5. Pour the wet mixture into the dry ingredients and gently fold just until combined; do not overmix.
  6. Spoon about 1 tablespoon of batter into each muffin liner.
  7. Sprinkle about 1 teaspoon of the cinnamon-pecan streusel over the batter in each cup.
  8. Add 2 more tablespoons of batter on top of the streusel in each liner.
  9. Finish by generously topping each muffin with the remaining streusel.
  10. Bake in preheated oven for 22 to 24 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove from oven and let muffins cool in the pan for 5 minutes.
  12. Transfer muffins to a wire rack to cool completely.
  13. In a small bowl, whisk together 1/2 cup powdered sugar, 1 tablespoon milk, and 1 teaspoon vanilla extract to make the vanilla glaze.
  14. Drizzle glaze over the slightly warm muffins before serving.
