Take another small dough piece, flatten it, cover the chocolate, pinch edges tightly to seal, and roll into a smooth ball. - BAKE THE COOKIES: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper. Place cookie dough balls about 2 inches apart. Bake for 10 to 12 minutes until tops crack and edges are firm but centers remain soft. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
