- 2 large eggs
- 1/4 cup vegetable oil
- 4 Tablespoons unsalted butter, melted
- 2 Tablespoons water
- 1 teaspoon vanilla extract
- 1 1/4 cups sugar
- 3/4 cup all-purpose flour
- 2/3 cup cocoa powder
- 1/2 cup confectioners’ sugar
- 1/2 teaspoon kosher salt
- 1/2 cup chocolate chips or chunks
- 3 cups strawberries, stems removed
- Chocolate melting wafers
Instructions
- Preheat oven to 325°F. Line an 8-inch square baking pan with parchment paper and spray with cooking spray.
- In a large bowl, whisk together eggs, vegetable oil, melted butter, water, and vanilla extract until smooth and shiny.
- In another bowl, whisk sugar, flour, cocoa powder, confectioners’ sugar, and salt. Pour dry ingredients into the wet and stir gently until just blended; do not overmix.
- Fold in chocolate chips or chunks and pour batter into prepared pan.
- Bake 35 to 40 minutes, until brownies are set in the middle and a toothpick comes out clean. Cool completely in pan.
- Once cool, arrange quartered strawberries on top, cut side down. Melt chocolate wafers per package instructions and drizzle over strawberries. Let chocolate set before slicing and serving.
Notes
For drizzling, melted chocolate chips can substitute chocolate melting wafers., To line baking pan: spray pan lightly, cut parchment to fit with 2 flaps for lifting, spray parchment and exposed pan edges to prevent sticking.
